Ingredients
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper, to taste
1 can black beans, rinsed and drained
1 avocado, sliced
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
Juice of 1 lime
8 small corn tortillas
Optional toppings: salsa, Greek yogurt, lime wedges
Preparation
1. Preheat the oven to 400°F (200°C).
2. In a bowl, toss the cubed sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper until well coated.
3. Spread the seasoned sweet potatoes on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.
4. In the meantime, prepare the black bean topping by heating the rinsed and drained black beans in a small saucepan over medium heat. Season with salt and pepper to taste and keep warm.
