  • 2 large sweet potatoes, peeled and cubed

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • 1 can black beans, rinsed and drained

  • 1 avocado, sliced

  • 1/2 cup diced red onion

  • 1/4 cup chopped fresh cilantro

  • Juice of 1 lime

  • 8 small corn tortillas

  • Optional toppings: salsa, Greek yogurt, lime wedges


1. Preheat the oven to 400°F (200°C).

2. In a bowl, toss the cubed sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper until well coated.

3. Spread the seasoned sweet potatoes on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.

4. In the meantime, prepare the black bean topping by heating the rinsed and drained black beans in a small saucepan over medium heat. Season with salt and pepper to taste and keep warm.

5. Warm the corn tortillas in a dry skillet or directly over a gas flame until they become pliable and slightly charred.

6. Assemble the tacos by layering the roasted sweet potatoes, black beans, sliced avocado, diced red onion, and chopped cilantro on each tortilla.

7. Squeeze fresh lime juice over the taco fillings and add any optional toppings you desire.
