  • 1 medium-sized pumpkin (about 3 pounds)

  • 1/4 teaspoon ground nutmeg

  • 4 cups vegetable broth

1. Start by preparing the pumpkin. Cut it in half, remove the seeds and pulp, and peel off the skin. Chop the pumpkin into small chunks.

2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

3. Add the pumpkin chunks to the pot along with the cumin, ginger, and nutmeg. Stir well to coat the pumpkin with the spices.

4. Pour in the vegetable broth, ensuring that the pumpkin is fully submerged. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until the pumpkin is tender.

5. Once the pumpkin is cooked and soft, use an immersion blender or transfer the soup to a blender in batches to puree it until smooth. Be cautious when blending hot liquids.

6. Return the pureed soup to the pot and season with salt and pepper according to your taste. Stir well and heat the soup over low heat for a few more minutes to ensure it's heated through.
