  • 4 boneless, skinless chicken breasts

  • 2 medium sweet potatoes, peeled and cubed

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh parsley for garnish (optional)


1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.

2. In a small bowl, combine the garlic powder, paprika, dried thyme, salt, and black pepper to make the seasoning mixture.

3. Place the chicken breasts in the prepared baking dish. Drizzle them with olive oil and sprinkle the seasoning mixture evenly over both sides of the chicken.

4. Arrange the cubed sweet potatoes around the chicken in the baking dish. Drizzle them with olive oil and season lightly with salt and pepper.

5. Bake in the preheated oven for approximately 35-40 minutes or until the chicken is cooked through and the sweet potatoes are tender, flipping the chicken halfway through.

6. Once cooked, remove the dish from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired.
